Ingredients

Units Scale

For the Truffles:

  • 1 jar (10 ounces) maraschino cherries, drained and finely chopped
  • 3 cups powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt

For the Chocolate Coating:

  • 1 cup semisweet chocolate chips
  • 1 cup peanut butter chips
  • 1/2 cup creamy peanut butter
  • 1/2 cup chopped roasted peanuts

Instructions

  1. Prepare the Truffle Mixture: In a medium bowl, combine cherries, powdered sugar, butter, almond extract, and salt. Mix until a thick dough forms.
  2. Shape the Truffles: Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze until firm, about 30–45 minutes.
  3. Make the Chocolate Coating: In a microwave-safe bowl, melt chocolate chips, peanut butter chips, and creamy peanut butter in 30-second intervals, stirring until smooth. Stir in chopped peanuts.
  4. Coat the Truffles: Dip each cherry ball into the chocolate mixture using a fork, ensuring full coating. Place back on the baking sheet.
  5. Chill and Serve: Refrigerate the truffles until the coating sets, approximately 15–20 minutes. Enjoy!

Notes

  • Store truffles in the refrigerator for up to 1 week or freeze for longer storage.
  • For a more intense cherry flavor, reduce powdered sugar or add cherry extract.
