Instructions

  1. Heat Skillet: In a cast iron skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat until shimmering.
  2. Cook Turkey: Add 1 pound of ground turkey and 1 teaspoon of minced garlic to the skillet. Break up the turkey as it cooks and sauté for about 5 minutes until the meat is browned and cooked through.
  3. Add Vegetables: Stir in ½ cup diced onions and ½ cup diced yellow pepper. Cook them until the onions become soft and translucent.
  4. Add Sweet Potatoes: Mix in 1½ cups of diced sweet potatoes, a pinch of red chili flakes (if using), salt, and freshly ground black pepper to taste. Cover the skillet and cook until the sweet potatoes are tender, checking occasionally to prevent sticking, about 10 to 12 minutes.
  5. Preheat Oven: While the sweet potatoes are cooking, preheat your oven to 400ºF (200ºC).
  6. Add Cheese: Once the sweet potatoes are tender, sprinkle ½ cup shredded mozzarella cheese evenly over the skillet.
