Potatoes:

  • 4 large russet potatoes, scrubbed
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Taco Meat:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water

Cheese Topping:

  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Sour cream, salsa, and guacamole for serving

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Bake Potatoes: Rub the scrubbed potatoes with olive oil, salt, and pepper. Place them on the prepared baking sheet and bake for about 50-60 minutes, or until tender.
  3. Cook Taco Meat: In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the taco seasoning and water. Simmer for 5-10 minutes until the mixture thickens.
  4. Assemble: Slice each baked potato open and fluff the insides with a fork. Top with the taco meat mixture, shredded cheddar cheese, and cilantro.
  5. Bake: Return the topped potatoes to the oven and bake for another 5-10 minutes, until the cheese is melted and bubbly.
  6. Serve: Serve the cheesy taco potatoes hot with sour cream, salsa, and guacamole on the side.

Notes

  • You can customize the toppings to your preference, such as adding diced tomatoes, jalapenos, or black olives.
  • For a vegetarian option, swap the ground beef with plant-based crumbles or black beans.
