Ingredients

Units Scale

Potatoes:

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Taco Meat:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 tablespoon taco seasoning
  • 1/4 cup water

Toppings:

  • 1 cup shredded cheddar cheese
  • Sour cream, diced tomatoes, sliced green onions, and sliced black olives for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with foil.
  2. Bake the potatoes: Scrub the potatoes and pat them dry. Rub with olive oil, sprinkle with salt and pepper, and place on the prepared baking sheet. Bake for about 1 hour until tender.
  3. Cook the taco meat: In a skillet, cook the ground beef and onion until the meat is browned. Add taco seasoning and water, simmer until the liquid is absorbed.
  4. Assemble: Slice each potato in half lengthwise and scoop out some of the flesh. Fill with the taco meat mixture and top with cheddar cheese.
  5. Bake again: Return the potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Serve: Garnish with sour cream, tomatoes, green onions, and black olives before serving.

Notes

  • You can customize the toppings to suit your taste, such as adding guacamole or jalapenos.
  • Feel free to use sweet potatoes instead of russet potatoes for a healthier twist.
