2lbs Yukon Gold or Russet potatoes, thinly sliced
Cheese Sauce:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2cups whole milk
1cup heavy cream
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
2cups shredded sharp cheddar cheese
1/2cup grated Parmesan cheese
Garnish:
Chopped fresh chives or parsley (optional)
Instructions
Preheat oven: to 375°F (190°C) and grease a 9×13-inch baking dish.
Make the sauce: Melt butter in a saucepan, whisk in flour, then slowly add milk and cream. Stir in garlic, salt, pepper, and paprika. Cook until slightly thickened. Remove from heat and stir in 1 1/2 cups cheddar cheese until smooth.
Layer potatoes: Place half in baking dish, pour half the sauce over. Repeat layers. Top with remaining cheese.
Bake: Covered for 40 minutes, then uncovered for 20–25 minutes until golden and tender. Rest for 10 minutes before serving. Garnish with herbs if desired.
Notes
Use a mandoline for even slices.
Prep ahead and add 10 minutes to bake from the fridge.
Substitute Gruyère or fontina for a different flavor.
