Potatoes:

  • 2 lbs Yukon Gold or Russet potatoes, thinly sliced

Cheese Sauce:

  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

Garnish:

  • Chopped fresh chives or parsley (optional)

Instructions

  1. Preheat oven: to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Make the sauce: Melt butter in a saucepan, whisk in flour, then slowly add milk and cream. Stir in garlic, salt, pepper, and paprika. Cook until slightly thickened. Remove from heat and stir in 1 1/2 cups cheddar cheese until smooth.
  3. Layer potatoes: Place half in baking dish, pour half the sauce over. Repeat layers. Top with remaining cheese.
  4. Bake: Covered for 40 minutes, then uncovered for 20–25 minutes until golden and tender. Rest for 10 minutes before serving. Garnish with herbs if desired.
