Potatoes:

  • 1 1/2 pounds baby potatoes, halved or quartered
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sausage and Cheese:

  • 1 pound smoked sausage, sliced into rounds
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup sour cream (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes: Toss the potatoes with olive oil, salt, and pepper, then spread them on a baking sheet. Roast for 20 minutes.
  3. Add sausage and seasoning: Remove from the oven, add sausage and ranch seasoning. Toss to coat and roast for another 15–20 minutes.
