Cheesy Mashed Potato Puffs:
2cups cold mashed potatoes
2 large eggs
1/2cup shredded cheddar cheese
1/4cup grated Parmesan cheese
1/4cup sour cream
2 tablespoons chopped chives or green onions
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
nonstick cooking spray
Instructions
Preheat the oven: Preheat the oven to 400°F (200°C) and lightly grease a mini muffin tin with nonstick cooking spray.
Prepare the mixture: In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan, sour cream, chives, garlic powder, salt, and pepper. Mix well until fully combined.
Fill the muffin tin: Spoon the mixture into the prepared muffin tin, filling each cup almost to the top.
Bake: Bake for 20–25 minutes, or until golden and puffed.
Cool and serve: Let cool for 5 minutes in the pan before removing. Serve warm.
