Pasta:
12ounces penne or rotini pasta
Chicken:
1 tablespoon olive oil
1pound boneless skinless chicken breast (cut into bite-sized pieces)
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Broccoli:
2cups broccoli florets
Cheese Sauce:
2 tablespoons unsalted butter
3 cloves garlic (minced)
2 tablespoons all-purpose flour
2cups milk
1cup shredded mozzarella cheese
1/2cup grated Parmesan cheese
Garnish:
Chopped parsley for garnish (optional)
Instructions
Cook Pasta and Broccoli: Cook pasta according to package directions in salted water. Add broccoli during the last 2–3 minutes of cooking. Drain and set aside.
Cook Chicken: In a large skillet, heat olive oil over medium heat. Add chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for 5–7 minutes until golden and cooked through. Remove chicken and set aside.
Combine and Serve: Add cooked pasta, broccoli, and chicken back into the skillet. Toss to coat in the cheese sauce. Cook for 1–2 minutes to heat through. Garnish with parsley if desired and serve warm.
Notes
You can substitute rotisserie chicken for a quicker version.
For extra flavor, stir in a pinch of crushed red pepper or top with extra Parmesan before serving.
