Cheesy Enchilada Chili is a delicious and comforting dish that combines the flavors of enchiladas with the heartiness of chili. This recipe is easy to make and perfect for a cozy night in or for feeding a crowd.

  • 1 pound ground beef or ground turkey
  • 1 tablespoon olive oil (if using lean meat)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)

Beans and Veggies

  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) pinto beans (drained and rinsed)
  • 1 can (15 oz) corn (drained)
  • 1 can (10 oz) diced tomatoes with green chilies

Sauce and Seasonings

  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Cheese and Toppings

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Chopped cilantro and sour cream for topping (optional)

Instructions

  1. Cook the Meat and Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and diced onion, cooking until browned. Add garlic and cook for 1–2 minutes.
  2. Add Beans, Veggies, and Seasonings: Stir in black beans, pinto beans, corn, diced tomatoes, enchilada sauce, salsa, and spices. Simmer for 20–25 minutes.
  3. Melt Cheese and Serve: Add shredded cheeses, stir until melted. Adjust seasoning if needed. Serve hot topped with cilantro and sour cream.

Notes

  • This chili can also be made in a slow cooker—brown the meat and onion first, then transfer everything to the crockpot and cook on low for 4–6 hours.
  • For a spicier version, add a diced jalapeño or use hot enchilada sauce.
