1/2cup sour cream
1 (15 oz) can whole kernel corn, drained
1 (15 oz) can creamed corn
1cup shredded cheddar cheese
1/4cup grated Parmesan cheese
1/4cup unsalted butter, melted
1 box (8.5 oz) corn muffin mix (like Jiffy)
2 large eggs
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
chopped parsley for garnish (optional)
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
Mix ingredients: In a large bowl, whisk together cream cheese and sour cream. Add both cans of corn, cheddar cheese, Parmesan, melted butter, corn muffin mix, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Bake: Pour the mixture into the prepared baking dish and bake for 40–45 minutes until golden and set.
