Ingredients

Pasta:

    12 oz pasta (penne or rotini)

Chicken:

    2 tablespoons olive oil
    1 pound boneless skinless chicken breast (cut into bite-sized pieces)
    1 teaspoon garlic powder
    1/2 teaspoon onion powder
    1/2 teaspoon salt
    1/4 teaspoon black pepper

Cheese Sauce:

    2 tablespoons butter
    2 tablespoons all-purpose flour
    2 cups milk
    1 cup shredded cheddar cheese
    1/2 cup shredded mozzarella cheese
    1/4 cup grated Parmesan cheese
    1 teaspoon Dijon mustard (optional)

Garnish:

    Chopped parsley

Instructions

  1. Cook the pasta: Cook the pasta according to package directions; drain and set aside.
  2. Cook the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken, garlic powder, onion powder, salt, and black pepper. Cook for 6–8 minutes until the chicken is cooked through and lightly golden. Remove the chicken and set aside.
  3. Make the cheese sauce: In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the milk and bring to a simmer, stirring constantly until the sauce thickens, about 3–4 minutes. Reduce heat to low and stir in cheddar, mozzarella, Parmesan, and Dijon mustard (if using), mixing until smooth.
  4. Combine and serve: Add the cooked chicken and pasta back to the skillet and toss until everything is coated in the cheesy sauce. Garnish with parsley and serve warm.

Notes

    For extra veggies, stir in cooked broccoli or spinach before serving.
    Use rotisserie chicken for a quicker version.
