For the casserole:
2cups cooked chicken (shredded or cubed)
1cup long grain white rice (uncooked)
1 can (10.5 ounces) cream of chicken soup
1 can (10.5 ounces) cream of mushroom soup
2 1/2cups chicken broth
1 1/2cups shredded cheddar cheese
1cup frozen peas and carrots (or mixed vegetables)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2cup additional cheddar cheese for topping (optional)
Chopped parsley for garnish (optional)
Instructions
Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
Mix the ingredients: In a large mixing bowl, combine the uncooked rice, both soups, chicken broth, 1 ½ cups cheese, vegetables, garlic powder, onion powder, salt, and pepper. Stir in the cooked chicken until evenly mixed.
Bake: Pour the mixture into the prepared baking dish and spread evenly. Cover tightly with foil and bake for 45–50 minutes, or until the rice is tender and liquid is absorbed.
Add cheese: Remove foil, sprinkle with the remaining ½ cup of cheese, and bake uncovered for an additional 5–10 minutes until the cheese is melted and bubbly.
Serve: Let sit for 5 minutes before serving. Garnish with parsley if desired.
Notes
For extra flavor, use rotisserie chicken and sharp cheddar cheese.
You can swap in brown rice, but increase baking time by 15–20 minutes and add a bit more broth if needed.
