For the beef mixture:
1lb ground beef
1 small onion (chopped)
2 cloves garlic (minced)
1 packet taco seasoning
1/2cup water
Additional ingredients:
1 can (15 oz) refried beans
1 can (10 oz) diced tomatoes with green chilies (drained)
1cup sour cream
2cups shredded cheddar cheese
4 large flour tortillas
1 tablespoon olive oil
Chopped green onions and cilantro for garnish (optional)
Instructions
Preheat and prepare: Preheat the oven to 375°F and grease a 9-inch round or square baking dish.
Cook beef mixture: Brown ground beef and onion in a skillet. Add garlic, taco seasoning, and water. Simmer.
Assemble layers: Layer tortillas, beef mixture, sour cream, and cheese three times in the baking dish. Top with tortilla and remaining cheese.
Bake: Brush with olive oil, cover, and bake for 20 minutes. Uncover and bake for additional 5–10 minutes until bubbly.
Rest and serve: Let it rest for 5 minutes before slicing. Garnish with green onions and cilantro.
Notes
You can use ground turkey or plant-based meat for a lighter version.
