  • 1 cup grated zucchini (squeezed dry)
  • 1/2 cup finely chopped red bell pepper
  • 1/2 cup grated carrot
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled feta cheese (optional)

Wrappers and Topping:

  • 8 egg roll wrappers or spring roll wrappers
  • olive oil spray or melted butter for brushing

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Sauté onion and garlic for 2 minutes. Add zucchini, bell pepper, and carrot. Cook until softened.
  3. Season and Cool: Stir in Italian seasoning, salt, and pepper. Let the mixture cool slightly, then add mozzarella and feta.
  4. Fill and Roll: Place filling on a wrapper, roll tightly, folding in the sides, and seal with water. Repeat with remaining wrappers.
  5. Bake: Brush or spray rolls with oil or butter. Bake for 20–25 minutes until golden and crisp. Serve warm.
