  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small red onion, thinly sliced

Toppings and Garnish:

  • 1 cup shredded Mexican blend cheese
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C). Lightly grease a baking dish and set aside.
  2. Season the Chicken: Rub chicken breasts with olive oil, fajita seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. Prepare the Dish: Arrange seasoned chicken in the baking dish and top evenly with sliced bell peppers and red onion. Cover with foil and bake for 25 minutes.
  4. Add Cheese: Remove foil, sprinkle shredded cheese over the top, and return to oven uncovered for another 10–12 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
