Asparagus:
1 1/2pounds fresh asparagus (trimmed and cut into 2-inch pieces)
Cheese Sauce:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1cup whole milk
1/2cup sour cream
1cup shredded sharp cheddar cheese
1/4cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Topping:
1/2cup crushed buttery crackers (like Ritz)
1 tablespoon melted butter
Instructions
Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
Prepare asparagus: Steam or blanch asparagus until tender. Drain and set aside.
Make cheese sauce: Melt butter, whisk in flour, then gradually add milk. Cook until thickened. Remove from heat and stir in sour cream, cheeses, garlic powder, onion powder, salt, and pepper.
Combine ingredients: Add asparagus to cheese sauce, toss to coat, and pour into baking dish.
Add topping: Mix crushed crackers with melted butter, sprinkle over casserole.
Bake: Bake for 20–25 minutes until bubbly and golden brown. Let cool slightly before serving.
Notes
You can substitute Greek yogurt for the sour cream or use Gruyère for a more upscale flavor.
Add cooked bacon bits or caramelized onions for extra richness.
If using frozen asparagus, thaw and drain well before adding.
