Ingredients
Scale
Pie Base
- 16-ounce bag shredded hash browns, frozen
- 1 tablespoon oil
- 2 teaspoons salt, divided
- 1/2 teaspoon ground black pepper
- 1/2 cup milk
- 1 cup (5 ounces) finely diced butternut squash
- 1-1/4 teaspoon garlic powder, divided
- 1/4 teaspoon ground black pepper
- 3/4 cup (3 ounces) shredded sharp cheddar cheese
Filling
- 1 lb. ground beef
- 1 medium onion, very finely diced
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 teaspoon cornstarch
- 1/2 cup beef broth
Instructions
- Prepare the Hash Brown Mixture: In a large mixing bowl, combine the frozen shredded hash browns with 1 tablespoon of oil, 1 teaspoon of salt, 1/2 teaspoon black pepper, 1/4 teaspoon garlic powder, and the milk. Stir well to evenly coat the hash browns and set aside.
- Incorporate Butternut Squash and Cheese: Add the finely diced butternut squash, 1/2 teaspoon garlic powder, and shredded sharp cheddar cheese to the hash browns mixture. Mix thoroughly to distribute all ingredients evenly.
- Sauté the Beef and Onions: In a large skillet over medium heat, cook the ground beef with the very finely diced onions until the meat is browned and cooked through, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.
- Add Flavorings to the Beef: Stir in the ketchup, mustard, and 1 teaspoon of salt to the cooked beef mixture. Mix well to combine all flavors evenly.
- Thicken the Filling: In a small bowl, dissolve the cornstarch in the beef broth, then pour this into the skillet with the beef mixture. Cook and stir until the liquid thickens, about 2-3 minutes. Remove from heat.
- Assemble the Pie: Preheat the oven to 375°F (190°C). Lightly grease a baking dish. Spread the hash brown mixture evenly across the bottom and up the sides of the dish to form a crust. Pour the beef filling evenly over the hash brown crust.
- Bake the Pie: Place the assembled pie in the preheated oven and bake for 30-35 minutes or until the hash brown crust is golden brown and crispy, and the filling is bubbly.
- Cool and Serve: Remove the pie from the oven and let it cool for 5 minutes before slicing. Serve warm and enjoy this twist on classic cheeseburger flavors in a hearty pie form.
Notes
- You can swap butternut squash with finely diced potatoes if preferred.
- For a healthier version, use lean ground beef or ground turkey.
- If you like it spicier, add a pinch of cayenne pepper or chili flakes to the beef mixture.
- Leftover pie can be refrigerated for up to 3 days and reheated in the oven.
- For a gluten-free option, ensure the ketchup and mustard are gluten-free.
