1pound cheese tortellini
Water for boiling

Summer Veggie Mix:
2 tablespoons olive oil
2 cloves garlic, minced
1 zucchini, diced
1 yellow squash, diced
1 red bell pepper, diced
1cup cherry tomatoes, halved
Salt and pepper to taste
1/4cup fresh basil, chopped
Instructions
Cook Tortellini: Boil water in a large pot, add salt, and cook the cheese tortellini according to package instructions. Drain and set aside.
Sauté Veggies: In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add zucchini, yellow squash, and red bell pepper. Cook until vegetables are tender.
