  • 20 ounces refrigerated cheese tortellini

  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 2 garlic cloves, minced

Seasonings:

  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper to taste

Garnish:

  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Cook the Tortellini: Cook the tortellini according to package directions, then drain and set aside.
