Cauliflower Soup:
1 large head cauliflower (cut into florets)
1 whole garlic bulb
2 tablespoons olive oil
Soup Base:
1 medium onion (diced)
2 celery stalks (chopped)
4cups vegetable or chicken broth
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2cup heavy cream
1 1/2cups sharp cheddar cheese (shredded)

Instructions
