Cauliflower Soup:

  • 1 large head cauliflower (cut into florets)
  • 1 whole garlic bulb
  • 2 tablespoons olive oil

Soup Base:

  • 1 medium onion (diced)
  • 2 celery stalks (chopped)
  • 4 cups vegetable or chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 1/2 cups sharp cheddar cheese (shredded)
  • Chopped chives or green onions for garnish (optional)

Instructions

  1. Roast the Garlic: Preheat the oven to 400°F. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes.
  2. Roast the Cauliflower: Toss cauliflower with olive oil, roast on a baking sheet for 25–30 minutes.
  3. Prepare the Soup Base: Sauté onion and celery, add roasted cauliflower, squeeze in roasted garlic, pour in broth, season with thyme, salt, and pepper. Simmer for 10 minutes.
  4. Purée the Soup: Blend until smooth, stir in cream and cheddar until melted and creamy. Adjust seasoning.
  5. Serve: Garnish with chives or green onions and serve hot.
