Cauliflower Chicken Nuggets with Dijon Honey Mustard Dip Recipe

  • 1 medium head cauliflower, cut into florets
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Olive oil spray (for baking)
  • 1/4 cup Dijon mustard
  • 2 tbsp honey
  • 1 tbsp mayonnaise (optional for creamier dip)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Steam cauliflower florets until tender, about 5-7 minutes. Let cool slightly and finely chop or pulse in a food processor.
  3. In a large bowl, combine chopped cauliflower, ground chicken, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Form the mixture into nugget shapes and place them on the prepared baking sheet.
  5. Lightly spray the nuggets with olive oil and bake for 20-25 minutes, flipping halfway, until golden brown and cooked through.
  6. Meanwhile, prepare the dip by whisking together Dijon mustard, honey, and mayonnaise until smooth.
  7. Serve the nuggets warm with the Dijon honey mustard dip.

Notes

  • For extra crispiness, broil the nuggets for 2-3 minutes at the end of baking.
  • You can air-fry the nuggets at 375°F for 12-15 minutes.
  • Adjust honey in the dip to taste for more or less sweetness.
