  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper

For Garnish:

  • 1/2 cup coconut milk or heavy cream (optional for creaminess)
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Heat Olive Oil: In a large pot, heat olive oil over medium heat.
  2. Sauté Onion: Add chopped onion and sauté until translucent.
  3. Add Garlic: Stir in garlic and cook for 30 seconds.
  4. Cook Carrots: Add carrots, cumin, coriander, salt, and pepper. Cook for 2–3 minutes.
  5. Add Broth: Pour in vegetable broth, bring to a boil, then simmer for 20–25 minutes until carrots are tender.
  6. Blend: Remove from heat, blend the soup until smooth.
