  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

  • 1 1/2 cups finely grated carrots
  • 1/2 cup crushed pineapple drained
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and prepare an 8×8-inch baking pan.
  2. Mix dry ingredients: Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
