  • 2 pounds beef stew meat (chuck or round, cut into 1-inch cubes)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 onion (chopped)
  • 1 green bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon oregano
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups beef broth
  • 1/2 cup tomato sauce
  • 1 bay leaf

Instructions

  1. Heat the oil: Heat the oil in a large skillet or Dutch oven over medium-high heat.
  2. Sear the beef: Season the beef with salt and pepper, then sear until browned on all sides. Set aside.
  3. Sauté vegetables: In the same pan, sauté onion and bell pepper until softened. Add garlic and tomato paste, cook for another minute.
  4. Add spices: Stir in cumin, chili powder, paprika, and oregano. Add flour, cook briefly.
  5. Deglaze and simmer: Pour in beef broth and tomato sauce, return beef to the pan, add bay leaf. Simmer covered for 1.5 to 2 hours.
  6. Finish and serve: Remove bay leaf before serving.

Notes

  • Serve with warm flour tortillas, rice, or refried beans.
  • For spicier flavor, add jalapeños or hot sauce.
