These Carne Asada Tacos are a delicious and authentic Mexican street food favorite. Marinated flank or skirt steak is grilled to perfection, then sliced and served on warm corn tortillas with fresh toppings. Perfect for a festive taco night!

Ingredients

Marinade:

  • 1 1/2 pounds flank or skirt steak
  • 1/4 cup orange juice
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 jalapeño (seeded and minced)
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For serving:

  • small corn tortillas
  • diced white onion
  • chopped cilantro
  • lime wedges
  • salsa
  • avocado (optional)

Instructions

  1. Marinate the Steak: In a medium bowl or zip-top bag, combine orange juice, lime juice, olive oil, garlic, jalapeño, cilantro, cumin, chili powder, paprika, salt, and pepper. Add the steak and marinate in the refrigerator for at least 2 hours, or up to 8 hours.
  2. Grill the Steak: Preheat grill or cast-iron skillet over high heat. Remove steak from marinade and pat dry. Grill for 4–5 minutes per side for medium-rare, or until desired doneness. Let rest for 5–10 minutes, then slice thinly against the grain.
  3. Assemble Tacos: Warm tortillas on the grill or in a skillet. Assemble tacos by topping tortillas with sliced carne asada, diced onion, chopped cilantro, and a squeeze of lime. Add salsa or avocado if desired.

Notes

  • For extra flavor, char the tortillas directly over a gas flame.
  • Carne asada also works great in burritos, bowls, or salads.
