2 leeks, thinly sliced
2 tablespoons butter
Salt and pepper to taste
For Mushroom Gruyere Pasta:
8oz pasta of choice
1 tablespoon olive oil
8oz mushrooms, sliced
2 cloves garlic, minced
1cup Gruyere cheese, grated
Fresh parsley for garnish
Instructions
Caramelize the Leeks: In a pan, melt the butter over medium heat. Add the sliced leeks and cook until caramelized, about 15-20 minutes. Season with salt and pepper.
Cook the Pasta: Cook the pasta according to package instructions. Reserve 1 cup of pasta water before draining.
Sauté the Mushrooms: In a separate pan, heat olive oil over medium-high heat. Add the mushrooms and garlic, sauté until mushrooms are golden brown.
Combine: Add the caramelized leeks to the mushroom pan. Toss in the cooked pasta, Gruyere cheese, and some pasta water to create a creamy sauce.
Serve: Garnish with fresh parsley and additional Gruyere cheese before serving.
Notes
You can add cooked chicken or bacon for extra protein.
Feel free to substitute Gruyere with other melting cheeses like Fontina or Swiss.
