  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 cup pumpkin purée
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 1/2 teaspoons vanilla extract

Topping:

  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 1/2 cups hot water

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together flour, baking powder, salt, sugar, cinnamon, nutmeg, and ginger.
  3. Combine Wet Ingredients: In another bowl, mix pumpkin purée, milk, melted butter, and vanilla extract. Add to dry ingredients and stir until just combined.
  4. Assemble and Bake: Spread the batter in the dish. Sprinkle pecans, brown sugar, and granulated sugar on top. Slowly pour hot water over without stirring. Bake for 40–45 minutes until golden and set.
  5. Cool and Serve: Let cool for 10–15 minutes before serving. Enjoy warm with ice cream or whipped cream.

Notes

  • Serve warm with vanilla ice cream or whipped cream for a delightful treat.
  • The hot water creates a self-saucing caramel layer while baking.
