Pretzel Bites:
40 mini pretzels
Caramel Filling:
20 soft caramels (unwrapped)
1 small apple (finely diced)
1/2 teaspoon lemon juice
Topping:
4oz white chocolate (melted)
1/4 teaspoon cinnamon
1 tablespoon crushed pretzels or toffee bits (optional for topping)
Instructions
Prepare Pretzel Bites: Line a baking sheet with parchment paper and lay out half of the pretzels.
In a small bowl, toss the diced apple with lemon juice to prevent browning and set aside.
Place one unwrapped caramel on each pretzel and bake at 350°F (175°C) for 4–5 minutes until the caramels soften.
Remove from the oven and gently press a few apple pieces into each softened caramel. Top each with another pretzel to create a sandwich. Let cool completely.
Decorate: Drizzle the melted white chocolate over the pretzel bites and sprinkle with cinnamon and optional crushed pretzels or toffee bits. Allow the chocolate to set before serving.

Use a firm, sweet-tart apple like Honeycrisp or Pink Lady for best texture.
