Vanilla Wafer Crust:

  • 1 teaspoon vanilla extract
  • 1 large egg

Apple Pie Layer:

  • 1 cup apple pie filling, finely chopped
  • 1/2 teaspoon ground cinnamon

Additional:

  • 1/4 cup caramel sauce (plus more for drizzling)
  • Whipped cream (optional, for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C) and line a muffin tin with 12 paper liners.
  2. Prepare crust: Place one vanilla wafer in the bottom of each liner.
  3. Make cheesecake filling: In a medium bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the egg and mix just until combined.
  4. Layer the cups: Spoon about 1 tablespoon of the cheesecake mixture over each vanilla wafer. Mix the chopped apple pie filling with cinnamon and spoon evenly over the cheesecake layer.
  5. Bake: Bake for 18–20 minutes or until centers are set.
  6. Cool and chill: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Chill in the refrigerator for at least 2 hours.
