For the Apple Cake Layers:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 1/2 cups peeled and finely chopped apples (such as Granny Smith)

For the Frosting and Topping:

  • 1 cup caramel sauce (store-bought or homemade)
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • extra caramel sauce and thin apple slices or chopped pecans for garnish (optional)

Instructions

  1. To make the cheesecake layer: Preheat oven to 325°F (163°C). Line a 9-inch springform pan with parchment paper and lightly grease. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour into pan and bake for 35–40 minutes or until set. Cool completely, then chill in refrigerator.
  2. To make the apple cake layers: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy. Beat in eggs one at a time, then mix in vanilla and sour cream. Gradually add dry ingredients. Fold in chopped apples. Divide batter evenly between prepared pans and bake 25–30 minutes, or until a toothpick inserted comes out clean. Cool layers completely.
  3. To assemble the cake: Place one apple cake layer on a serving plate. Top with the chilled cheesecake layer, then the second apple cake layer.
  4. For the frosting: Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Frost the top and sides of the cake. Drizzle with caramel sauce and garnish with apple slices or chopped pecans if desired. Chill for 1 hour before slicing.

Notes

  • Make the cheesecake a day ahead for easier assembly.
  • For added crunch, stir ½ cup chopped pecans into the cake batter.
