Ingredients

Units Scale

For the Balsamic Reduction:

  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine)
  • 1 bunch fresh basil leaves
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • Toothpicks or small skewers for assembly

Instructions

  1. Prepare the Balsamic Reduction: In a small saucepan over medium heat, combine the balsamic vinegar and honey. Bring to a gentle simmer and cook for 8–10 minutes, stirring occasionally, until the mixture reduces by half and becomes thick and syrupy. Remove from heat and let cool.
  2. Assemble the Salad Bites: While the reduction is cooling, assemble the bites by threading one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto a toothpick or small skewer. Arrange the assembled bites on a serving platter.
  3. Final Touches: Drizzle with olive oil, sprinkle with salt and pepper, and lightly drizzle the balsamic reduction over the top just before serving.

Notes

  • You can make the balsamic reduction ahead of time and store it in the refrigerator for up to a week.
  • For extra flavor, marinate the mozzarella balls in olive oil and herbs before assembling.
