2 tablespoons balsamic vinegar
1 teaspoon honey
For the Caprese Salad Bites:
1pint cherry tomatoes
1 (8 oz) package fresh mozzarella balls (bocconcini or ciliegine)
1/4cup fresh basil leaves
1 tablespoon olive oil
Salt and pepper to taste
20 toothpicks for assembly
Instructions
Prepare the Balsamic Reduction: In a small saucepan, combine the balsamic vinegar and honey. Simmer over medium heat for 5–7 minutes until thickened into a syrupy reduction. Let cool.
Assemble the Caprese Salad Bites: Skewer a cherry tomato, basil leaf, and mozzarella ball onto each toothpick. Arrange on a platter. Drizzle with olive oil, season with salt and pepper.
Finish and Serve: Drizzle the cooled balsamic reduction over the bites just before serving.
Notes
For a twist, try marinated mozzarella or add avocado cubes to the skewers.
