12oz pasta (penne or fusilli)
1 tbsp olive oil
1lb Italian sausage (casings removed)
2cups cherry tomatoes, halved
3 cloves garlic, minced
1/4 tsp red pepper flakes (optional)
1/2cup fresh basil leaves, torn
8oz fresh mozzarella balls (bocconcini), halved
Salt and black pepper to taste
Grated Parmesan cheese, for garnish (optional)
Instructions
Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it apart with a spoon.
Add the cherry tomatoes, garlic, and red pepper flakes (if using). Cook for 4–5 minutes, until the tomatoes soften and release juices.
Stir in the cooked pasta and toss to combine.
Remove from heat and stir in the fresh basil and mozzarella balls.
Season with salt and black pepper to taste. Serve warm, topped with grated Parmesan if desired.
Notes
Use spicy Italian sausage for added heat.
Can substitute mozzarella balls with cubed fresh mozzarella.
