Description

A quick and flavorful Caprese Pasta with Italian Sausage, combining cherry tomatoes, mozzarella, and basil for a delicious weeknight dinner ready in 30 minutes.

Ingredients

  • 12 oz pasta (penne or fusilli)
  • 1 tbsp olive oil
  • 1 lb Italian sausage (casings removed)
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, torn
  • 8 oz fresh mozzarella balls (bocconcini), halved
  • Salt and black pepper to taste
  • Grated Parmesan cheese, for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the Italian sausage and cook until browned and cooked through, breaking it apart with a spoon.
  3. Add the cherry tomatoes, garlic, and red pepper flakes (if using). Cook for 4–5 minutes, until the tomatoes soften and release juices.
  4. Stir in the cooked pasta and toss to combine.
  5. Remove from heat and stir in the fresh basil and mozzarella balls.
  6. Season with salt and black pepper to taste. Serve warm, topped with grated Parmesan if desired.

Notes

  • Use spicy Italian sausage for added heat.
  • Can substitute mozzarella balls with cubed fresh mozzarella.
  • Add a splash of balsamic glaze for extra flavor.
