Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

Cheesecake Filling:

  • 16 ounces whole milk ricotta cheese, drained
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup mini chocolate chips
  • Powdered sugar for dusting (optional)
  • Extra mini chocolate chips for garnish (optional)

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into pan and bake for 8 minutes. Cool.
  2. Make the Filling: Beat ricotta and cream cheese until smooth. Add sugars, eggs, vanilla, cinnamon, and chocolate chips. Pour over crust.
  3. Bake: Bake for 35-40 minutes until set. Cool, then chill for at least 3 hours.
  4. Serve: Lift out of pan, slice, dust with powdered sugar, and garnish with chocolate chips.

Notes

  • For best texture, drain the ricotta before use.
