  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

Vegetables:

  • 1 small yellow onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1/2 cup diced carrots
  • 2 medium potatoes, peeled and diced
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup chopped green onions

Seasonings:

  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 tablespoon all-purpose flour

Additional:

  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Chopped fresh parsley for garnish

Instructions

  1. Sauté Vegetables: In a large pot, heat olive oil and butter. Sauté onion, bell pepper, celery, and carrots until softened.
  2. Add Seasonings: Stir in garlic, Cajun seasoning, smoked paprika, thyme, salt, and pepper. Sprinkle in flour and cook.
  3. Cook Chowder: Pour in chicken broth, add potatoes, and simmer until tender. Stir in corn and cream, cook for a few minutes.
  4. Add Shrimp: Add shrimp and cook until pink and opaque. Stir in green onions and adjust seasoning.
  5. Serve: Garnish with parsley and serve hot.
