Cajun Sausage and Rice Skillet

A quick and flavorful one-pan Cajun Sausage and Rice Skillet packed with smoky sausage, aromatic vegetables, and bold Cajun spices—perfect for busy weeknights.

Ingredients

  • 1 tablespoon olive oil
  • 12 oz smoked sausage, sliced
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 teaspoon Cajun seasoning (more to taste)
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned, about 3-4 minutes.
  3. Add diced onion and bell pepper, and sauté until softened, about 5 minutes.
  4. Stir in minced garlic and cook for another 30 seconds.
  5. Add the rice, chicken broth, diced tomatoes, Cajun seasoning, paprika, black pepper, and salt.
  6. Stir well and bring the mixture to a boil.
  7. Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes.
  9. Fluff with a fork, garnish with green onions, and serve warm.

Notes

  • Use Andouille sausage for a spicier kick.
  • Adjust Cajun seasoning to your preferred spice level.
  • Can be made ahead and stored in the fridge for up to 3 days.
