- 1 tablespoon olive oil
- 12 oz smoked sausage, sliced
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 teaspoon Cajun seasoning (more to taste)
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Salt to taste
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned, about 3-4 minutes.
- Add diced onion and bell pepper, and sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for another 30 seconds.
- Add the rice, chicken broth, diced tomatoes, Cajun seasoning, paprika, black pepper, and salt.
- Stir well and bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff with a fork, garnish with green onions, and serve warm.
Notes
- Use Andouille sausage for a spicier kick.
- Adjust Cajun seasoning to your preferred spice level.
- Can be made ahead and stored in the fridge for up to 3 days.
