Ingredients

Vegetable Base:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 small head green cabbage, chopped

Additional Ingredients:

  • 1 (14.5 oz) can diced tomatoes
  • 6 cups vegetable broth or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 bay leaf
  • Optional: fresh parsley for garnish

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
  2. Cook Vegetables: Add carrots and celery, cook until slightly softened.
  3. Add Remaining Ingredients: Stir in cabbage, tomatoes, broth, and seasonings. Simmer until vegetables are tender.
  4. Adjust Seasoning and Serve: Remove bay leaf, adjust seasoning, and serve hot. Garnish with parsley if desired.
