- 6 large green onions, sliced

- 1 package of dry onion soup mix
- 6–8 cups of water or vegetable broth
- 1 tsp black pepper
- Salt to taste
- 1–2 cloves garlic, minced (optional)
- 1 tsp olive oil (optional)
Instructions
- In a large pot, heat olive oil over medium heat (if using), then sauté garlic and onions until slightly softened.
- Add chopped cabbage, bell peppers, carrots, and celery. Stir to combine.
- Pour in the diced tomatoes and add dry onion soup mix, pepper, and salt.
- Add water or vegetable broth to cover the vegetables. Bring to a boil.
- Reduce heat and simmer for about 30-45 minutes or until vegetables are tender.
- Adjust seasoning as needed and serve hot.
