Butter Toffee:
1cup unsalted butter
1cup granulated sugar
1/4 teaspoon salt
2 tablespoons water
1 teaspoon vanilla extract
Additional Ingredients:
2cups roasted cashews, lightly chopped
1cup semisweet chocolate chips (optional for topping)
Instructions
Prepare the Toffee: Line a baking sheet with parchment paper. Melt butter in a saucepan, add sugar, salt, and water. Stir until boiling. Cook to 300°F, then remove from heat. Stir in vanilla and 1 1/2 cups of cashews. Pour onto the baking sheet.
Add Toppings: If using, sprinkle chocolate chips on the hot toffee. Let melt for 1–2 minutes, then spread. Top with remaining cashews.
Cool and Break: Let the toffee cool, then break into pieces.
