For the Buffalo Chicken:

  • 2 cups cooked shredded chicken
  • 1/3 cup buffalo hot sauce
  • 2 tablespoons ranch or blue cheese dressing

For the Quesadillas:

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tablespoon butter or olive oil (for cooking)
  • chopped green onions or cilantro for garnish (optional)

Instructions

  1. Prepare the Buffalo Chicken: In a bowl, mix shredded chicken with buffalo sauce and ranch or blue cheese dressing until well coated.
  2. Cook the Quesadillas: Heat a skillet, place a tortilla, sprinkle cheese on half, add buffalo chicken, more cheese, fold, cook 2–3 minutes per side until golden brown and cheese melts. Repeat for remaining tortillas.
  3. Serve: Slice into wedges, garnish with green onions or cilantro, and serve warm.
