2cups cooked shredded chicken
1/3cup buffalo hot sauce
2 tablespoons ranch or blue cheese dressing
For the Quesadillas:
1cup shredded mozzarella cheese
1cup shredded cheddar cheese
4 large flour tortillas
1 tablespoon butter or olive oil (for cooking)
chopped green onions or cilantro for garnish (optional)
Instructions
Prepare the Buffalo Chicken: In a bowl, mix shredded chicken with buffalo sauce and ranch or blue cheese dressing until well coated.
Cook the Quesadillas: Heat a skillet, place a tortilla, sprinkle cheese on half, add buffalo chicken, more cheese, fold, cook 2–3 minutes per side until golden brown and cheese melts. Repeat for remaining tortillas.
Serve: Slice into wedges, garnish with green onions or cilantro, and serve warm.

Serve with extra ranch, blue cheese dressing, or celery sticks for a classic buffalo combo.
