Ingredients

Units Scale

Buffalo Chicken:

  • 2 cups cooked chicken breast, shredded
  • 1/3 cup buffalo sauce
  • 2 tablespoons ranch dressing or blue cheese dressing

Grilled Cheese:

  • 8 slices hearty sandwich bread
  • 4 tablespoons unsalted butter, softened
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 green onions, sliced

Instructions

  1. Prepare Buffalo Chicken: In a bowl, combine shredded chicken, buffalo sauce, and ranch dressing until well coated.
  2. Assemble Sandwiches: Butter one side of each bread slice. Place 4 slices buttered-side down on a skillet or griddle over medium heat. Layer each with a mix of cheddar, mozzarella, and blue cheese if using. Add buffalo chicken mixture evenly over the cheese, sprinkle with green onions, and top with more cheese. Place the remaining bread slices on top, buttered-side up.
  3. Grill: Cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  4. Serve: Slice in half and serve warm.

Notes

  • Adjust the spice level by using mild or hot buffalo sauce.
  • This sandwich pairs perfectly with celery sticks and extra ranch for dipping.
