Description
Savory and spicy buffalo chicken bites, a perfect appetizer or party snack, with tender chicken pieces coated in a flavorful buffalo sauce and baked to perfection.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup buffalo sauce
- 1/4 cup ranch or blue cheese dressing
- 1/2 cup shredded cheddar cheese
- 1/4 cup finely chopped green onions
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- 1/4 cup panko breadcrumbs (optional for a crunchy topping)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, mix chicken pieces with olive oil, garlic powder, paprika, cayenne pepper (if using), salt, and pepper. Toss to coat evenly.
- Spread chicken evenly on the prepared baking sheet in a single layer.
- Bake for 15–20 minutes, or until chicken is fully cooked and golden brown, flipping halfway through.
- While the chicken bakes, heat buffalo sauce in a small saucepan over low heat. Once warmed, add ranch or blue cheese dressing and stir to combine.
- Once chicken is done baking, toss the chicken in the buffalo sauce mixture until well-coated.
- If desired, top with shredded cheddar cheese and return to the oven for another 2–3 minutes, just until cheese is melted.
- Garnish with chopped green onions and serve with extra dressing for dipping.
Notes
- For extra crispiness, coat the chicken pieces in panko breadcrumbs before baking.
- Adjust the heat level of the buffalo sauce to your taste preference.
- Can be made ahead: Prepare and bake the chicken, then toss in the buffalo sauce just before serving.
- For a lighter option, use grilled or baked chicken instead of frying.
