Description

Savory and spicy buffalo chicken bites, a perfect appetizer or party snack, with tender chicken pieces coated in a flavorful buffalo sauce and baked to perfection.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch or blue cheese dressing
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 1/4 cup panko breadcrumbs (optional for a crunchy topping)


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, mix chicken pieces with olive oil, garlic powder, paprika, cayenne pepper (if using), salt, and pepper. Toss to coat evenly.
  3. Spread chicken evenly on the prepared baking sheet in a single layer.
  4. Bake for 15–20 minutes, or until chicken is fully cooked and golden brown, flipping halfway through.
  5. While the chicken bakes, heat buffalo sauce in a small saucepan over low heat. Once warmed, add ranch or blue cheese dressing and stir to combine.
  6. Once chicken is done baking, toss the chicken in the buffalo sauce mixture until well-coated.
  7. If desired, top with shredded cheddar cheese and return to the oven for another 2–3 minutes, just until cheese is melted.
  8. Garnish with chopped green onions and serve with extra dressing for dipping.

Notes

  • For extra crispiness, coat the chicken pieces in panko breadcrumbs before baking.
  • Adjust the heat level of the buffalo sauce to your taste preference.
  • Can be made ahead: Prepare and bake the chicken, then toss in the buffalo sauce just before serving.
  • For a lighter option, use grilled or baked chicken instead of frying.
