Ingredients

Penne Pasta:

  • 12 oz penne pasta

Chicken:

  • 1.5 lbs boneless skinless chicken breasts (cut into bite-sized pieces)

Other Ingredients:

  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 pint cherry tomatoes (halved)
  • 1/2 cup fresh basil (chopped)
  • 1/4 cup balsamic vinegar
  • 1 tablespoon balsamic glaze (optional)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the Penne Pasta: Cook penne pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: In a skillet, heat olive oil and sauté chicken pieces until browned and fully cooked. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, sauté garlic, add cherry tomatoes, then return chicken to the skillet along with cooked pasta, basil, balsamic vinegar, and balsamic glaze. Cook until heated through.
  4. Finish the Dish: Stir in mozzarella and Parmesan cheeses until melted. Serve garnished with basil.

Notes

  • For a lighter version, skip the mozzarella and use just Parmesan.
  • This dish is great served warm or at room temperature.
  • Whole wheat pasta or gluten-free pasta can be used as alternatives.
