Ingredients

Units Scale

For the Brownie Cookies:

  • 1/2 cup unsalted butter
  • 1 1/2 cups semi-sweet chocolate chips (divided)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Melt butter and chocolate: In a microwave-safe bowl, melt the butter with 1 cup of chocolate chips in 20-second intervals, stirring until smooth. Set aside to cool slightly.
  3. Prepare the batter: In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until light and fluffy. Slowly stir in the melted chocolate mixture.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Fold in the remaining 1/2 cup of chocolate chips.
  5. Bake the cookies: Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the tops are shiny and crackled but the centers are still soft.
  6. Cool and serve: Let the cookies cool on the pan for 5 minutes before transferring to a wire rack.

Notes

  • For extra richness, sprinkle with sea salt before baking or add chopped nuts to the dough.
  • These cookies are best enjoyed slightly warm or stored in an airtight container for up to 4 days.
