Ingredients

Units Scale

Chicken:

  • 4 boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil

Sauce:

  • 1 (20-ounce) can pineapple chunks in juice, drained (reserve 1/2 cup juice)
  • 1/3 cup packed brown sugar
  • 1/4 cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
  • Sliced green onions and sesame seeds for garnish (optional)

Instructions

  1. Heat Olive Oil: Heat olive oil in a large skillet over medium-high heat.
  2. Sear Chicken: Season chicken with black pepper and sear on both sides until golden brown, about 3–4 minutes per side. Remove and set aside.
  3. Make Sauce: In the same skillet, add reserved pineapple juice, brown sugar, soy sauce, garlic, and ginger. Bring to a simmer.
  4. Cook Chicken: Return chicken to the skillet along with pineapple chunks. Cover and cook for 15–20 minutes until chicken is cooked through.
  5. Thicken Sauce: If desired, stir in cornstarch slurry and cook uncovered for 2–3 more minutes until sauce thickens.
  6. Garnish and Serve: Garnish with green onions and sesame seeds before serving if desired.

Notes

  • Serve over rice or noodles for a complete meal.
  • Chicken breasts can be substituted, but reduce simmer time slightly to avoid overcooking.
