Main Cake:

  • 2 1/2 cups all-purpose flour

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups packed brown sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract

For the Chai Glaze:

  • 1 cup powdered sugar
  • 12 tablespoons brewed chai tea (or milk)
  • 1/4 teaspoon chai spice blend

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or bundt cake pan.
  2. In a medium bowl, whisk together flour, chai spice, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream butter and brown sugar until light and fluffy. Beat in eggs one at a time, then add sour cream and vanilla extract.
  4. Alternate adding dry ingredients and milk, mixing just until combined. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  7. For the glaze, whisk powdered sugar, chai tea (or milk), and chai spice until smooth and pourable. Drizzle over the cooled cake before serving.
