1/2cup (1 stick) unsalted butter
1 bag (10 oz) mini marshmallows
1/4 tsp salt
1 tsp vanilla extract
6cups crispy rice cereal
Instructions
In a large pot over medium heat, melt the butter. Continue cooking, stirring constantly, until the butter turns golden brown and gives off a nutty aroma, about 4–5 minutes.
Immediately reduce the heat to low and stir in the mini marshmallows and salt. Stir until the marshmallows are fully melted and smooth.
Remove from heat and stir in the vanilla extract. Quickly add the crispy rice cereal and mix until evenly coated.
Press the mixture into a greased or parchment-lined 9×13-inch pan using a spatula or greased hands.
Let cool at room temperature for about 30 minutes before cutting into squares.
Notes
For a gourmet twist, stir in 1/2 cup of mini chocolate chips or drizzle with melted dark chocolate after pressing into the pan.
Using fresh marshmallows makes the treats extra soft and gooey.
