1/2cup (1 stick) unsalted butter, browned
1 (10-ounce) bag mini marshmallows, plus 1 cup reserved
1/4 teaspoon kosher salt
1 teaspoon pure vanilla extract
6cups crispy rice cereal
Instructions
In a large pot, melt the butter over medium heat. Continue to cook, stirring frequently, until it foams and turns a deep golden brown with a nutty aroma.
Immediately reduce the heat to low and stir in the 10-ounce bag of marshmallows (reserving 1 cup). Stir constantly until marshmallows are melted and the mixture is smooth.
Remove from heat and quickly mix in the salt and vanilla. Add the crispy rice cereal and stir until evenly coated.
Gently fold in the reserved 1 cup of marshmallows. Transfer the mixture to a greased 9×13-inch pan and press in evenly using a spatula or wax paper.
Let cool completely at room temperature before cutting into squares.
