Ingredients

Units Scale

For the cookies:

  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup pumpkin purée (blotted to remove excess moisture)
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Brown the butter: In a small saucepan over medium heat, melt the butter until golden brown and fragrant, about 5–7 minutes. Let cool.
  2. Prepare the dough: Combine brown butter, pumpkin purée, sugars, egg yolk, maple syrup, and vanilla. Mix in dry ingredients until just combined. Chill the dough.
  3. Bake the cookies: Preheat oven to 350°F (175°C). Scoop dough onto baking sheets and bake for 9–11 minutes until edges are set. Cool on a wire rack.

Notes

  • Blotting the pumpkin ensures a chewier texture.
  • For added flavor, sprinkle with sea salt or cinnamon sugar before baking.
