Indulge in the perfect single-serve dessert with this decadent Brookie For One recipe. A delightful combination of a chocolate chip cookie base topped with a rich brownie layer, baked to gooey perfection.

Ingredients

Scale

Cookie Layer:

  • 1 tablespoon unsalted butter
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon beaten egg (or egg yolk)
  • 2 tablespoons all-purpose flour
  • pinch of salt
  • 1 tablespoon mini chocolate chips

Brownie Layer:

  • 2 tablespoons boxed brownie mix
  • 1/2 tablespoon vegetable oil
  • 1/2 tablespoon water

Instructions

  1. Preheat the oven: Preheat the oven or toaster oven to 350°F. Lightly grease a ramekin or small oven-safe dish.
  2. Prepare cookie dough: In a small bowl, melt the butter. Stir in the granulated sugar, brown sugar, and vanilla. Mix in the egg, then add the flour, salt, and mini chocolate chips to form a cookie dough. Press the dough into the bottom of the ramekin.
  3. Make brownie batter: In a separate bowl, stir together the brownie mix, vegetable oil, and water until smooth. Pour the brownie batter over the cookie dough layer.
  4. Bake: Bake for 18–22 minutes or until the top is set but the center is still slightly gooey. Let cool slightly before enjoying warm with a scoop of ice cream if desired.

Notes

  • Use a toaster oven to avoid heating the whole kitchen.
  • Swap mini chocolate chips with chunks or peanut butter chips for variation.
  • Microwave version: cook for 60–75 seconds, but texture may vary.
